J’adore le principe du crumble qui permet de faire un dessert ultra riche en fruits avec une croute sablée différente à chaque fois. Pour cette version automnale j’ai utilisé de la poudre de noisette et du sucre d’érable que j’avais rapporté du Canada, mais pas de panique si vous avez du sucre de canne brut cela fera très bien l’affaire. Le mélange poire, figue et pomme fonctionne à tous les coups et la petite pointe de cannelle est juste parfaite pour ce dessert de saison.
Nous l’avons dévoré tiède après une bonne ballade en foret et c’était juste parfait !
Pour 4 personnes :
-4 poires mûres
-6 figues mures
-1 pomme
-1 pointe de cannelle
-90 gr de farine
-40 gr de flocon d’avoine
-40 gr de poudre de noisette
-100 gr de sucre (d’erable pour moi, mais du sucre de canne brut fera l’affaire)
-90 gr de beurre demi sel
-Commencez par préchauffer votre four à 180°C
-Beurrer un plat allant au four
-Pelez les poires et la pomme et coupez-les en cubes
– lavez les figues et coupez-les en 8
-Déposez tous les fruits dans le plat et saupoudrez légèrement de cannelle
-Dans un saladier mélangez la farine, la poudre de noisette, l’avoine et le sucre
-Ajoutez-y le beurre froid coupé en petits cubes
-Mélangez-le du bout des doigts afin d’obtenir une texture sableuse
-Versez le mélange sur les fruits puis enfournez pour 35 à 45 minutes (selon votre four)
-Laissez tiédir et servez le ensuite

Faites chauffez l’huile dans une poêle à fond épais, ajoutez y le gros sel, puis les pommes de terre.
-Laissez le cuire à feux vif en les tournants régulièrement pendant 20 minutes. Elles doivent bien colorer.
-Baissez le feu et laissez-le cuire encore 10 minutes.
-Ajoutez l’échalote ciselée et cuire encore 5 minutes.
-Ajoutez le beurre froid (cela va les faire croustiller), et laissez cuire encore 15 minutes en les mélangeant.
