En ces jours pluvieux, j’adore diner d’une soupe et d’une tartine. C’est surement une des choses les plus réconfortante que je connaisse. Le printemps arrivant à grand pas, il est encore temps de profiter des derniers légumes d’hivers avant de plonger avec délectations dans tous les légumes nouveaux. Ce velouté mari à merveille le moelleux du potimarron et l’acidité des endives avec la note sucrée apportée par les poires… un vrai délice !
Pour 6 personnes :
-1 gros potimarron
-4 endives
-3 poires
-1 oignon
-1 bouillon cube de légume
-2 c à soupe de crème fraiche (ou de lait de coco si vous préférez la version vegan)
-1 c à soupe d’huile d’olive
-Commencez par lavez le potimarron, puis coupez-le en deux, enlevez les graines et découpez-le en gros cubes (pas besoin de le peler)
-Pelez et émincez l’oignon
-Pelez les poires, enlevez le cœur
– Lavez les endives et découpez-les en 4
-Commencez par déposer une marmite sur le feu et versez y 1 c à soupe d ‘huile d’olive
-Ajoutez les oignons et les endives et laissez-les colorer en remuant de temps à autres
-Ajoutez y le potimarron et laissez revenir encore quelques minutes
-Recouvrez le tout d’eau ( à hauteur) et ajoutez y la poire et le bouillon cube, baissez le feu et laissez cuire environ 30 minutes jusqu’à ce que les légumes soient bien cuits
-Mixez le tout longuement et ajoutez-y la crème fraiche, rectifiez l’assaisonnement
-Servez bien chaud avec des croutons ou une tranche de pain
