Voilà une façon gourmande de préparer un dessert avec les restes de pain, de brioche ou de viennoiseries ; j’ai toujours adoré le diplomate que l’on trouve dans les boulangeries, la version française du bread pudding. Je vous ai souvent posté des recettes de la version américaine ici, ou bien ici, mais j’aime aussi beaucoup le moelleux du diplomate qui est notamment apporté grâce à sa cuisson au bain marie.
Il pourra être plus ou moins riche selon vos envies et surtout selon les restes de votre placard. J’ai préféré la version simple avec de la baguette, mais avec de la brioche c’est pas mal non plus !
Pour 6 personnes :
-200 gr de pain sec (pain de mie, baguette ou brioche)
-4 œufs
-60 cl de lait
-50 gr de raisins secs
-80 gr de sucre de canne
-1 c à c d’extrait de vanille ou 1 gousse de vanille dont vous aurez prélevé les graines
-8 cl de rhum
-1 pincée de sel
-Commencez par faire bouillir 3 c à soupe d’eau, ajoutez-y les raisins et le rhum et laissez gonfler 30 minutes
-Préchauffer votre four à 180°C
-Concassez grossièrement le pain
-Dans un grand saladier battez ensemble les œufs et le sucre
-Ajoutez y la vanille, le sel et finissez par le lait, mélangez bien le tout et ajoutez y le pain sec
-Laissez le pain se charger de liquide pendant 10 minutes
-Versez le reste du mélange rhum et eau des raisins et les raisins secs dans la préparation, mélangez de nouveau
-Beurrez un moule à cake et sucrez-le
-Versez la préparation dedans et déposez le tout dans un plat haut
-Glissez le tout au four et remplissez le plat d’eau bouillante afin de faire un bain marie
-Laissez cuire votre diplomate pendant 45 minutes
-Quand il est cuit, laissez le refroidir 5 minutes puis passez la lame d’un couteau sur les bords et démoulez le.
-Il se mange tiède ou a température ambiante
