Un pain avec une croute bien croustillante une belle mie et qui grâce à sa touche de miel se conserve bien.. Voilà ce que j’ai trouvé chez l’ami Dorian… et depuis ce pain trop facile à la cocotte est présent sur notre table. Je vais bientôt tenter d’autres parfums moi…
Pour un gros pain :
-500 gr de farine T65
-25 gr de levure de boulanger fraiche
-½ c à café de sel fin
-1 c à café de miel (châtaigner pour moi)
-30 cl d’eau (300 gr)
-80 gr de graines mélangées (noisette, sésame, graine de courge, amandes)
-3 figues coupées en petits cubes
-Mettez la levure avec le miel et l’eau dans un bol et laissez le poser 10 minutes
-Dans le bol d’un robot mettez la farine et le sucre puis ajoutez y le mélange liquide et levure
-Pétrissez avec le crochet à vitesse moyenne pendant 2 minutes
-Ajoutez les graines en pluie et les figues et pétrissez de nouveau 5 minutes
-Déposez la pate dans un saladier et recouvrez d’un torchon, laissez la pousser 2 heures
-Prenez une cocotte en fonte et recouvrez en le fond et les parois de papier sulfurisé
-Farinez votre plan de travail et mettez y la pate, dégazez la en appuyant vos poings dessus.
-Reformez une boule de pate
-Déposez la dans la cocotte, couvrez et laissez de nouveau pousser 2 heures
-Préchauffez votre four à 220°C
-Saupoudrez votre pain de farine et incisez le dessus avec la pointe d’un couteau bien aiguisé
-Enfournez pour 40 minutes dans le four chaud… avec le couvercle
-5 à 10 minutes avant la fin, retirez le couvercle afin de le faire dorer
-Laissez le refroidir sur une grille
