Ces derniers temps je vous ai proposé pas mal de recettes au poulet, et plutot que d’acheter des morceaux déjà récoupé je les prélève sur des poulets entiers. Du coup je me retrouve à la tete de pas mal de carcasse et pour ne pas les jeter je les utilise pour faire un bouillon incomparable avec celui en cubes.
En ce moment quand il pleut j’adore me délecter d’un de ces bouillon réconfortant dans lequel j’ajoute des pâtes. Je vous explique ici ma technique, vous allez voir c’est simplissime.
-2 carcasses de poulet fermier (roti ou frais dont vous avez prelevé les morceaux)
-2 cuisses de poulet
-1 gros oignon
-1 gousse d’ail
-4 carottes
-2 branches de céleri
-1 grosse pincée de gros sel
-Quelques tours de moulin à poivre
-des pâtes crues selon votre convenance
-J’utilise des carcasses de poulet crues dont j’ai prélévé les morceaux pour faire par exemple les recettes de poulet au slowcooker, au fur et à mesure de leur utilsation je les filme et les conserve au congélateur. Cela marche aussi très bien avec des carcasses de poulet roti
-Dans une grande cocotte (la plus grande que vous ayez, déposez les carcasses de poulet écrasées , les cuisses de poulet entière, les carotte épluchées et coupées en gros morceaux, le celeri coupez en troncons, l’oignon pelé et coupé en 4 ainsi que la gousse d’ail pelée
-Recouvrez le tout avec plusieurs litres d’eau froide
-Ajoutez y le sel et le poivre et commencez la cuisson pour 3 heures
-Au bout de la première heure, une écume se forme à la surface, enlevez la avec une écumoire
