Si il y a bien une recette emblématique de ma grand mère ce serait ces endives braisées à l’orange. Elle en faisait très souvent et nous les mangions avec une escalope de dinde. Comme elle se conserve très bien elle en faisait beaucoup et nous les réchauffions les jours suivant.
C’est une recette ultra simple et qui magnifie les endives. Elles sont ainsi juste caramélisées avec une petite pointe d’orange juste parfaite.
Je vous conseille vraiment de tenter la recette vous ne serez pas déçus !
Pour 4 personnes :
-8 endives
-1 grosse orange sanguine
-50 gr de beurre
-1 c à café de sucre
-Sel et poivre
-Commencez par lavez les endives et les couper en deux dans la longueur
-Faite chauffer une sauteuse sur le feu et faites y fondre le beurre
-Ajoutez y ensuite les endives cotées coupées vers le fond et laissez les cuire 5 minutes sur feu moyen, surveillez les bien pour ne pas qu’elles brulent
-Ajoutez y le jus de l’orange sanguine et quelques cuillères à soupe d’eau, le sucre et laissez cuire 10 minutes à couvert et à feux doux
-Enlevez le couvercle et prolonger la cuisson 5 minutes et surveillez les régulièrement pour ne pas qu’elles colorent trop
-Salez et poivrez et dégustez avec une viande blanche
